  • Servings: 4
  • Difficulty: Easy
  • Preparation Time: 15 minutes
  • Cook Time: 35 minutes
  • Total Time: 50 minutes, plus 30 minutes cooling time

Ingredients:

  • 2 cups fresh blueberries (around 11 ounces)
  • 2 cups fresh strawberries, cleaned, hulled, and quartered (about 11 ounces)
  • 1/4 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/2 teaspoon finely grated lemon zest
  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 teaspoon vanilla extract
  • 1/3 cup sliced almonds (approximately 1 1/2 ounces), chopped
  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar, packed
  • 1/8 teaspoon salt
  • 3 tablespoons cold unsalted butter, cut into small pieces

Instructions:

  1. Preheat your oven to 375°F and place a rack in the center. Line a baking sheet with parchment paper or foil; set aside.
  2. In a large bowl, combine the blueberries, strawberries, sugar, cornstarch, lemon zest, lemon juice, and vanilla. Toss to coat the berries evenly and set aside.
  3. In a different bowl, whisk together the almonds, flour, brown sugar, and salt. With your hands, blend the butter pieces into the dry ingredients until a single ball forms. Divide the ball into four parts, then shape each part into a patty about 2 1/2 inches wide. Set aside.
  4. Stir the berry mixture to redistribute the juices, then distribute the mixture among the jars. Place one almond-butter patty on top of the berry mixture in each jar, pressing gently to compact the berries.
  5. Evenly space the jars on the prepared baking sheet and bake until the topping is golden-brown and crispy and the liquid is bubbling around the edges of the jar, around 30 minutes. Allow the crisps to cool on a rack for at least 30 minutes before serving. If not serving right away, let the crisps cool completely, cover, and refrigerate for up to 4 days.

Tips for Beautifying your Dessert:

  • To add some eye-catching flair to your dessert, garnish with mint leaves or edible flowers before serving.
  • For a richer, creamier finish, serve with vanilla ice cream or whipped cream.
