Baked Goodness: Peach-Dulce de Leche Bread Pudding

Tired of the usual peach crisp, pie, or cobbler recipes? Shake things up with a boozy peach schnapps-infused bread pudding loaded with dulce de leche and roasted peaches. Once baked, give the leftover schnapps a second life in a Sex on the Beach cocktail!

Here's the game plan:

If you're pressed for time, feel free to skip the step to squeeze the bread before soaking; just ensure it soaks for more than 3 hours. Choose a baking dish with a depth of at least 2 inches, since the custard may expand as it bakes.

🥘 Serves: 10-12🛰️ Difficulty: Easy⏰ Total: 1 hr prep + 1-4 hours soaking time + 2 1/2 hours baking and cooling

Ingredients:

  • 12 large eggs
  • 4 cups heavy cream
  • 1 3/4 cups granulated sugar
  • 3/4 cup peach schnapps
  • 1 1/2 teaspoons fine salt
  • 1 (1-pound) loaf challah or brioche bread, cut into 1-inch cubes (about 9 cups)
  • 1 1/2 to 2 pounds peaches or nectarines (about 5 medium)
  • Butter, for coating the baking dish
  • 1 cup dulce de leche

Process:

  1. In a large bowl, whisk eggs, cream, sugar, schnapps, and salt until combined.
  2. Add bread cubes and mix with your hands, giving it a gentle squeeze (or not, if you're short on time). Cover the bowl with plastic wrap and refrigerate for at least 1 hour and up to 4 hours.
  3. Preheat oven to 425°F. Halve, pit, and slice peaches or nectarines into sixths. Arrange them on a baking sheet in a single layer and roast until soft and slightly browned, approximately 15-20 minutes. Let cool to room temp on the tray. Proceed with roasted peaches or refrigerate them for later.
  4. Lower the oven temp to 325°F, position one rack in the middle and another in the lower third, and place a foil-lined baking sheet on the lower rack (catch any bread pudding drips as it bakes). Butter a 13-by-9-inch baking dish.
  5. Remove bread mixture from the fridge, add roasted peaches, and mix well. Spread the mixture into the prepared baking dish. Drop dollops of dulce de leche evenly over the bread mixture, gently press the dulce de leche in slightly.
  6. Cover the pudding with foil and bake for about 1 1/2 hours on the middle rack. The custard around the outer 2 inches should be set but the center still jiggly. Remove foil and continue baking until the surface is browned in spots, around 30 minutes more. Remove from the oven and let cool for at least 30 minutes before serving.
