  • 6 large egg yolks, at room temperature

Instructions

  1. Preheat the oven to 400°F, rack in the middle. Give the baking dish a generous butter coating, followed by half a cup of Parmesan for the bottom and sides – set it aside.
  2. Simmer water in a large pan over medium heat, toss in the broccoli, season with salt and pepper, and mix it all up. Cover that sucker up with a tight lid and cook until tender, bout 10 minutes, stirrin' occasionally. Drain the broccoli in a colander, then transfer to a lined baking sheet, spread it out, and leave it be.
  3. Wipe the pan clean with paper towels, add the measured butter, and melt it on medium heat. Add the onion and cook, stirring occasionally, until softened, about 10 minutes. Blend in the flour, salt, and black pepper, then cook until the flour is all toasted up, almost 5 minutes.

  6. Take the reserved broccoli and toss it into a food processor with half a cup of the sauce. Process it until it's smooth and creamy. Combine this broccoli mixture with the remaining Parmesan sauce, adjust the salt and pepper, mixed, tasting as you go - it should be slightly salty (better too salty than too bland).
  7. Beat those egg whites and cream of tartar in a stand mixer until stiff peaks form, about 2 minutes. Transfer around a third of the egg whites into the broccoli mixture and fold it in to incorporate. Add the rest of the egg whites and gently fold until no egg white streaks remain, being careful not to overmix. Scoop this mixture into the prepared baking dish, smooth it out, and it's ready for the oven.
  8. Bake until puffed, golden brown, and set, about 40 minutes. Time to serve that baby!
