Steps

  1. Stir together the lemon juice, zest, mustard, shallot, and measured salt and pepper in a medium, non-reactive bowl.
  2. Grate the eggs on the large holes of a box grater and set them aside.
  3. Slice the Brussels sprouts crosswise until your reach 1/2 inch from the stem, discard the stem, and add the sliced sprouts to a large bowl. Break up the layers and discard any tough pieces.
  4. While continuously whisking, drizzle the oil into the shallot mixture until it's all incorporated.
  5. Add the pine nuts and half of the grated eggs to the Brussels sprouts and drizzle with the dressing. Gently toss until combined. Let sit at room temperature for about 15 minutes to soften and let the flavors meld.
  6. Toss the salad again and season with additional salt and pepper if needed. Transfer to a serving dish, top with the remaining eggs, and sprinkle with the Parmesan.
