- Olive oil (1 tab.)
- 1 large onion (coarsely chopped)
- Celery (3 stalks, coarsely chopped)
- Garlic (3 cloves, chopped)
- Russet potato (1 small, peeled and coarsely chopped)
- Fresh basil (1 tab. chopped)
- Fresh oregano (2 teaspoons chopped)
- Ground cumin (1 teaspoon)
- Vegetable stock or water (6 cups)
- Asparagus (2 pounds, trimmed, tips reserved, and stalks cut crosswise into 1-inch pieces)
- Tamari (1 tablespoon)
- Sea salt (2 teaspoons)
- White pepper (1/8 teaspoon, freshly ground)
- Fresh cilantro (1/2 cup, finely chopped)
Instructions:
- Warm up the olive oil in a heavy stockpot on medium heat. Sauté the onion, celery, and garlic for 8 minutes, or until the onion becomes translucent. Toss in the potato, basil, oregano, and cumin. Add the stock and bring to a simmer over high heat. Reduce heat to medium-low, cover, and cook for 10 minutes, or until the potato is nearly tender. Add the asparagus stalks and simmer for 5 minutes, or until they're tender, and the potato is extremely soft.
- Pureé the soup in the pot using a hand-held immersion blender until smooth. Alternatively, in batches, pureé in a regular blender until smooth. Add the tamari, salt, and pepper. Reheat the soup to a simmer, then fold in the cilantro.
- Cook the reserved asparagus tips in boiling water for 1 minute, or until they're tender-crisp. Drain, then cut the tips in half lengthwise.
- Pour the soup into individual bowls. Garnish with the asparagus tips and serve.
