Creamy Lemon Herb Sauce-Coated Coral Pasta, Enhanced with Succulent Lobster
This delectable dish is a real showstopper! I used home-made Italian pasta from Torino, crafted from natural ingredients for those vibrant hues. The unique shape of the pasta is perfect for seafood, so I threw in two of my favorites, lobster and caviar. Feel free to customize your seafood mix based on preference. The creamy shallot and chive mixture, combined with lemon infused olive oil, provides the perfect balance of flavors with the lobster and caviar. I found the pasta at HEB's Central Market, but you can order Torino pasta online. Alternatively, you can purchase lemon infused olive oil online at Sonoma Farm, or substitute with Mantova or HEB's Central Market Organics brand. Serves 4, or for a romantic dinner, simply halve the ingredient amounts. However, I'd advise against halving the sauce ingredients, as the extra sauce can be used as a sauce to pour over chicken the next day. Thus, for a two-person meal, you would only require 1 lobster, utilizing only half the box of pasta.

Ingredients (9)
- 2 - 2 lb. live lobsters, cooked and chopped into bite-sized pieces, saving claws
- 1/4 cup of butter
- 1 shallot, minced
- 1/4 cup of vodka
- 1/4 cup of milk
- 1 - 5.2 oz. container of Boursin Brand Shallot and Chive Spread
- 1 tablespoon of lemon infused olive oil
- 1 - 8.8 oz. box of Torinio brand Corals Pasta from Italy
- 1 - 4 oz. jar of black caviar
Instructions
- Fill a large pot or stock pot halfway with water and bring to a boil. Place live lobsters into boiling water head first. Cover and boil for 15 minutes. The lobsters should turn a deep red color. Remove from the pot and let cool for a few minutes. Twist each claw off at the base of the body of the lobster. Place claw on a hard surface and cover with a towel. Hit claw with the palm of your hand to break shell. Remove all lobster meat from joint and arm of the lobster. Take remaining lobster tail and cut down the center lengthwise with kitchen shears. Set aside and continue with the sauce and pasta.
In a large pot, add water and cook pasta according to package directions and drain.
In a medium sauce pan, melt butter and sauté shallot over medium-high heat until soft. Add vodka and reduce by half. Add milk and cheese, whisking until melted. Add lemon infused olive oil. Add pasta, lobster (reserving claws for decorative purposes), and gently stir. If sauce seems too thick, add a little more milk.
To serve, divide pasta between two bowls, ensuring each one has approximately equal amounts of lobster. Place a claw on top of each serving and add a dollop of caviar, and serve immediately.
