Ingredients:- 3/4 cup quinoa, any variety- 6 cups water- 2 tablespoons olive oil- 1 garlic clove, finely chopped- 1 seeded jalapeño, finely chopped- 1 pound peeled Yukon Gold potatoes, small diced- 1 teaspoon cumin- 1 teaspoon kosher salt, plus more to taste- 1 bunch scallions, sliced (white & light green parts)- 3 cups spinach leaves- 4 ounces feta cheese, small diced- 1/3 cup fresh cilantro leaves- Black pepper- 1 hard-boiled egg, finely chopped
Instructions:1. Rinse the quinoa and combine it with the water in a large saucepan. Bring to a boil, then lower heat and simmer until you see the white casings separate, about 10-15 minutes.2. Strain the quinoa, reserving the cooking liquid. Add water if needed to total 6 cups. Set aside the quinoa and liquid.3. Heat oil in a large saucepan, sauté garlic and jalapeño for 30 seconds. Toss in the potatoes, cumin, and salt and cook until softened, adjusting heat as necessary.4. Add reserved liquid, half the scallions, and simmer until potatoes are tender (around 12 minutes).5. Stir in cooked quinoa, spinach, and remaining scallions and cook until spinach begins to wilt (about 3 minutes).6. Remove from heat, add feta and cilantro, season with salt and pepper, and top with chopped egg before serving!
