Ingredients (15)

  • 1 can white beans
  • 1/4 cup sun-dried tomatoes
  • 2 sprigs of fresh rosemary
  • 3 tablespoons of pecorino cheese
  • Optional: 1/8 teaspoon crushed red pepper
  • Salt and black pepper, to taste
  • 3 tablespoons of cornmeal
  • 4 tablespoons of olive oil
  • 1 shallot
  • 1 tablespoon white wine vinegar
  • 2 packets Dijon mustard
  • 3 cups baby spinach
  • 1 frisé lettuce
  • 3 tablespoons shaved Parmesan cheese

Instructions

  1. Drain and rinse the white beans and finely chop the sun-dried tomatoes. Mince the rosemary leaves and discard the stems. Peel and mince the shallot. Rinse and tear the frisée leaves into 1-inch pieces, discarding the root.
  2. In a large bowl, smash white beans until mostly smooth with a fork. Add the chopped sun-dried tomatoes, minced rosemary, grated pecorino, crushed red pepper (if using), and season with salt and black pepper. Mix to combine. Fold in the cornmeal and 2 tablespoons reserved liquid from beans.
  3. Form mixture into 4 equal patties, about 3/4-inch thick and 3 inches in diameter. Chill in fridge for 5 to 10 minutes.
  4. Heat 1 teaspoon olive oil in a large pan over medium heat. Add the shallot and sauté until translucent, about 3 minutes. Add white wine vinegar and simmer until reduced by half, about 30 seconds. Transfer to a small bowl.
  5. Add 1 packet mustard to the shallots and stir to combine, discarding the remaining mustard. Add 2 tablespoons olive oil and whisk to combine. Taste and add salt and pepper as needed. Set aside.
  6. Heat 2 tablespoons olive oil in the pan from dressing. Add the patties and cook until golden on outside and warmed through, about 2-3 minutes per side. Transfer to a paper towel-lined plate to drain.
  7. Toss spinach and frisée with half of dressing in a large bowl. Divide salad evenly between 2 plates. Top with patties, spoon over remaining dressing, garnish with shaved Parmesan, and serve.
