Crispy Chorizo and Potato Breakfast Tacos

Ingredients (6, because 7 is just too many):
- Olive oil
- Diced potatoes (2 ’n' a half cups worth)
- Slice up 8 ounces of spicy Spanish Chorizo
- Large eggs (6)
- Kosher salt's got the droppa
- 6 warm and tender corn tortillas
Let's get cookin', ya filthy animals!
- Fire up a big ol' non-stick skillet and add a dollop of oil.
- Toss in the cooked potatoes and sauté ‘em until they’re browned and crispy - about 10 minutes.
- Add the Chorizo slices and stir them in with the potatoes for about 5 minutes, then set those aside.
- Place a small non-stick skillet over fire, chuck some oil in the center, then crack in 1 egg. Season it with a pinch of salt and scramble it up until the white is set. Repeat this pleasure with the other 5 eggs.
- As the eggs are cookin', get your tortillas ready. Warm ‘em up direct on the gas flame till they start to puff and blister a bit.
- Plop a fried egg on each tortilla, then evenly distribute the potato-Chorizo mixture on top. These tacos are eat it quick 'n' dirty, so serve ‘em pronto.
