Pan-Roasted Duck Breast with Red Wine and Mushroom Risotto (60 minutes)

  • Difficulty: Easy
  • Servings: 2

Ingredients:

  1. Chicken broth: 3 cups
  2. Wild mushrooms: 8 ounces
  3. Fresh thyme leaves: 4 sprigs
  4. Shallot: 1, peeled and minced
  5. Orange: 1, halved
  6. Boneless, skin-on duck breast: 1
  7. Soy sauce: 1/4 cup
  8. Honey: 1 teaspoon
  9. Kosher salt
  10. Black pepper
  11. Olive oil: 1 1/2 tablespoons
  12. Unsalted butter: 1 packet
  13. Arborio rice: 1/2 cup
  14. Red wine: 1/2 cup
  15. Grated pecorino cheese: 1/4 cup

Instructions:

  1. Heat oven to 400°F. Bring chicken broth to a simmer and keep warm. Clean mushrooms, mince shallot, and cut orange in half. Pat dry the duck breast.
  2. Combine soy sauce, honey, and juice from half an orange. Season with salt and pepper. Score duck skin in a criss-cross pattern, then season with salt and pepper. Sear skin-side down in a medium ovenproof pan on medium heat for approximately 6 minutes. Pour off excess fat.
  3. Toss mushrooms with thyme, 1 tablespoon of olive oil, salt, and pepper, then roast in the oven for about 15 minutes until tender.
  4. While duck sears and mushrooms roast, pour marinade over the duck. Cook for an additional minute, then turn and transfer pan to the oven until medium-rare, about 7-9 minutes. Season and rest duck for 5 minutes before thinly slicing.
  5. In a separate pan, heat butter and 1/2 tablespoon of olive oil. Cook shallot until tender, then add rice and toast for 2-3 minutes. Pour red wine and cook until absorbed. Add broth, bring to a boil, then simmer until rice is tender. Stir in Pecorino and mushrooms, and season with salt and pepper as needed.
  6. Serve risotto on plates, top with sliced duck, and drizzle with reserved marinade.
