Ingredients (6):
- 14 to 16 ounces pizza dough
- Flour, for dusting the work surface
- 1/2 cup peanut butter
- 1/2 cup jam or jelly
- 2 quarts vegetable oil
- Powdered sugar, for dusting
Instructions:
- Prepare a sheet with parchment paper; set aside. Lay down your dough on a floured work surface, and roll it out to approximately 1/4 inch thickness. Slice the dough into a dozen 1-1/2-by-3-inch rectangles with a sharp knife.
- Create a little peanut butter and jam sandwich: place a dollop of peanut butter and jam in the center of each rectangle, then fold and seal the edges.
- Place the uncooked fritters onto the prepared baking sheet, cover 'em loosely with plastic wrap or a damp cloth, and let 'em rise in a toasty environment until they puff up and reach about 1/2 inch thickness, around 30 minutes.
- Warm-up 2 quarts of vegetable oil in a Dutch oven or large, heavy-bottomed pot. Aim for 365°F on your candy/fat thermometer. Prep a second baking sheet with a double layer of paper towels; set aside.
- Once the oil hits the perfect temperature, fry four fritters at a time until they're golden brown, flipping them halfway through, around 2 minutes total. Use a slotted spoon to transfer the fritters to the paper towel-lined baking sheet. Cook the rest of the fritters in batches. Sprinkle them with powdered sugar before serving, warm and delicious!!
Optional: If you've got a sweet tooth, try doctoring up your fritters by sprinkling some chopped peanuts on top! Enjoy!
