Chilled Cucumber, Avocado and Tartare Delight

Ingredients

- 2 tablespoons olive oil

- 1 large cucumber, peeled and thinly sliced
- 2 ripe avocados, diced
- 1 tablespoon black olives, pitted and sliced
- 1 tablespoon green olives, pitted and sliced
- Salt and pepper, to taste
Optional Tartare Addition
- 100g fresh fish (salmon or tuna), finely chopped (sashimi-grade)
- 1 teaspoon lemon juice
- Salt and pepper, to taste
Instructions
- Preparing the Salad
- Mix the herbs with the yogurt and let it sit for a few hours before serving for better flavor development.
- Whisk the olive oil and lemon juice together, then combine with the diced cucumber, olives, and avocado in a large bowl. Set the mixture aside in the refrigerator.
- Assembly
- Just before serving, combine the tartare ingredients (if using) in a small bowl. Form the yogurt mixture into four mounds on plates, and surround each mound with the cucumber, avocado, and olive mixture. Top with the tartare, if using.
