  • 1/2 pound wild mushrooms: (e.g., chanterelles, wood ears, lobster mushrooms, maitakes, etc.) - feel free to use whatever's available
  • 2 oz extra-virgin olive oil
  • 1 oz garlic cloves, peeled and crushed
  • A dash of Kosher salt
  • Freshly ground black pepper to taste
  • 1/2 tablespoon fresh thyme, chopped
  • 1 oz flat-leaf parsley
  • 1 tbsp (1/8 stick) unsalted butter
  • 6 oz Taleggio cheese, sliced
  • 4 slices brioche

Directions to the Stars:

  1. Heat the oven to 375°F and slot in a rack in the middle.
  2. Spread out the mushrooms in a single layer in a baking dish. Drizzle with oil, toss in the garlic, a pinch of salt, pepper, thyme, and parsley, and give it a gentle stir. Roast those babies until soft and a tad browned (25 minutes). Keep 'em warm.
  3. Melt the butter over medium heat in a skillet or nonstick pan large enough to hold 4 slices of brioche. Distribute the Taleggio evenly over the bread slices. Cook until the brioche underside turns golden and crisp (about 4 minutes).
  4. Distribute the roasted mushrooms between 2 of the brioche slices. Top with the remaining 2 slices, cheese-side down. Kyaa, it's a thing of beauty! Slice diagonally in half, place the victors on warmed plates, and dig in!
