  • 2 tablespoons Hellmann's mayonnaise

  • 1 big yellow onion, thinly sliced
  • 3 farm-fresh eggs
  • 2 tablespoons thinly sliced chives
  • A pinch of kosher salt
  • 1 brioche bun
  • 1 thick slice sharp cheddar cheese

Steps

Sriracha Mayo Mix:

  1. Mix together Sriracha and mayo in a small bowl until even in hue. Set aside.

Golden Caramelized Onions:

  1. In a sauté pan over medium-high heat, melt half the butter. Add the onion, lower the heat to low, and cook, stirring occasionally, until the onion is incredibly soft and a luscious golden brown, approximately 45 minutes. Set aside.

Creamy Scrambled Eggs:

  1. In a cold sauté pan, crack 3 eggs and add the remaining butter. Mix well with a wooden spoon to blend the yolks and whites into a uniform color. Avoid stirring vigorously as it'll ruin the eggs' consistency.
  2. Place the egg mixture over medium-high heat. Stir the eggs until the edges begin to curdle. Once the eggs start to coagulate, remove from the heat and stir the curds off the edges of the pan. Place the pan back on the heat and stir the eggs until they're the consistency of a thick custard. Add the chives and season with salt to taste. Remember, seasoning should happen at the last moment to prevent the eggs from becoming watery. Transfer the scrambled eggs to a metal bowl.

Assemble Your Masterpiece:

  1. Split and toast the bun, then spread the Sriracha mayo on both halves. Pile the scrambled eggs onto the bottom half.
