- 6 heaping tablespoons of tahini

- 1 chunky garlic clove, finely minced
- A sprinkle of kosher salt
- 1/4 cup of golden olive oil
Salad Assembly:

- Approximately 6 cups of chopped hearts of romaine
- 1 petite English cucumber, split lengthwise and sliced
- 1 pint of juicy cherry tomatoes, halved

- 1 cup of roughly broken pita chips
Time to Mix Things Up!
- Cook your falafel according to the recipe instructions.
- Ready to shake things up? Add the tahini, lemon juice, garlic, and a pinch of salt into a tight jar. Shake vigorously. Then, add the olive oil and give it another good shake. If it's too thick, thin it out with a splash of water until it's perfect for pouring. Set it aside.
- Toss your salad greens into a spacious, shallow salad bowl, drizzle a little dressing, and combine with your hands. Scatter the cucumber, tomatoes, scallion, and feta on top. Ingredients- 1 cup of dried chickpeas- 1/2 onion, chopped- 4 garlic cloves, chopped- 1/4 cup fresh cilantro, chopped- 1/4 cup fresh parsley, chopped- 1 1/2 teaspoons of kosher salt- 1 teaspoon of baking powder- 1 teaspoon of ground coriander- 1 teaspoon of ground cumin- 1/4 cup all-purpose flour- Vegetable oil for frying- Tahini sauce (optional)
Instructions
- Soak those chickpeas: Place dried chickpeas in a large bowl and submerge them in cold water by at least 2 inches. Keep it in the fridge overnight.
- Process the mixture: After soaking, drain and dry the chickpeas. Pop them into a food processor and process until the chickpeas are partly broken up. Toss in the onion, garlic, cilantro, parsley, salt, baking powder, coriander, and cumin. Pulse until finely chopped but not too smooth. Sprinkle flour over and pulse to combine.
- Shape the falafel: Use a 1-ounce cookie scoop or two spoons to portion the chickpea mixture into balls. Roll the balls between your hands to compact them.
- Deep-frying: Fry the falafel balls in hot vegetable oil until golden brown, approximately 2 to 3 minutes per side. Drain on a rack.
