  • 2 large red and green peppers, chopped

  • 2 tbsp Huy Fong chili garlic sauce
  • 1/2 tsp coriander
  • 1/2 tsp curry powder
  • 1/2 tsp black pepper
  • 1/2 tsp lemon pepper
  • 2 tbsp olive oil
  • 1 cup bamboo shoots
  • 1/4 cup chopped green onions
  • 1/8 cup fresh cilantro, chopped
  • (Optional) 1/4 cup long chopped lemongrass
  • Salt to taste

Instructions (30 mins)

  1. Combine chicken with sesame oil, chili garlic sauce, coriander, curry powder, black pepper, and lemon pepper. Let it marinate for at least 20 minutes or up to 24 hours.
  2. Heat olive oil in a large saucepan over medium heat. Add the diced onions and chopped peppers, cooking until slightly seared. Reduce heat and add the bamboo shoots, then cover and steam for 1 minute.
  3. To the saucepan, add the marinated chicken, broth, and coconut milk. Bring to a boil and cook for 8-10 minutes, or until chicken is cooked through.
  4. Season with salt to taste and remove from heat.
  5. Ladle the soup into serving bowls, topping with green onions and cilantro as desired.
