Grilled Bison Burger with Bacon and Cheese

Ingredients (6 servings):
- 6 slices Smoky Bacon (about 6 ounces)
- 1 large Onion, thinly sliced
- 4 medium Jalapeños, seeded and thinly sliced lengthwise
- 3 tablespoons Worcestershire Sauce
- 2 Garlic Cloves, peeled and minced (about 1 tablespoon)
- 1 large Egg
- 1 teaspoon Kosher Salt
- 1/2 teaspoon Black Pepper
- 2 pounds Ground Bison Meat
- 6 thin slices Swiss Cheese (about 3 1/4 ounces)
- 6 toasted Burger Buns
- 1 medium Hass Avocado, sliced just before serving
Preparation:
- Heat your broiler to high and position a rack in the center. Arrange a cooling rack inside a baking sheet and set aside.
- In a large skillet over medium heat, cook the bacon until browned and crispy, around 10 minutes. Transfer the cooked bacon to a paper-towel-lined plate and reserve the bacon fat in the pan. Set aside the bacon, but don't toss the fat yet! Add the thinly sliced onion and jalapeños to the skillet and sauté until soft and lightly caramelized, about 4 minutes in the reserved bacon fat. Remove the mixture from heat and set aside.
- In a large bowl, whisk together the Worcestershire sauce, minced garlic, egg, salt, and pepper until the egg is well combined. Add the ground bison meat and mix thoroughly.
- Shape the meat mixture into 6 equal patties, about 3/4-cup each, and place them on the rack inside the baking sheet. Broil the patties until they're browned and firm to the touch, around 10 minutes for medium doneness. Top each burger with a slice of cheese and continue broiling until the cheese is melted, about 1 minute.
- To serve, layer the cooked cheeseburgers onto toasted buns, placing a heap of sautéed onion and jalapeños, as well as the crispy bacon slices, on top of each burger. Finish with fresh avocado slices.
