In my family, this dish holds a special place reminiscent of my grandma's kitchen. With a bit of research, the German name for this dish has surfaced: "Himmel und Erde."

Ingredients (8)
- 2 lb potato (cut into ½ inch cubes)
- 2 tbsp caraway seeds
- 1 ½ lb apple (preferably crisp, crunchy like Granny Smith) cut into ½ inch cubes as well
- 1 tbsp sugar (I prefer honey)
- 2 tbsp butter
- 4 slices of bacon, chopped and gently cooked
- ¼ cup of milk (boiled with a frothy top, be careful it doesn't boil over)
- Salt & Pepper (to taste)
Instructions
- Boil the potatoes with caraway seeds in salted water.
- When potatoes are boiling, cook for 10 minutes and add in the apples.
- Fry the bacon and reserve, then heat the milk with melted butter.
- Strain the potatoes and apples, let them dry, then mash them in a pot with the hot milk/butter and honey. Add cooked bacon pieces.
- Season with salt and pepper before serving.
As an aside, German tradition pairs this dish with sausages and bacon for a more substantial feast. Enjoy experimenting with different versions of this timeless classic!
