Malva Pudding, a quintessential South African treat, is known for its chewy exterior and sweet, caramel-like sauce. While the classic serving methods include a saucy bath and a side of custard, whipped cream, or ice cream, there are numerous ways to elevate this dessert.

- 1 cup standard sugar
- 1 tablespoon margarine
- 1 tablespoon white wine vinegar (red wine works too!)
- 2 tablespoons Apricot Jam (give Strawberry Jam a try too!)
- 5ml Vanilla extract
- 2 Large eggs
- 1 Cup self-raising flour
- 1 teaspoon baking powder
- 1 teaspoon bicarbonate of soda
- 1 Cup milk
- FOR THE CARAMEL SAUCE
- 1 Cup standard sugar (try Treacle for a butterscotch twist)
- 125g butter
- A bit of cream, milk, or water (around 2-3 tablespoons)
Let's Get Cooking
- First, mix sugar and margarine in a bowl
- Add vinegar, vanilla, jam, and eggs, combining well
- Sift in the flour, baking powder, and bicarb, before blending with the wet mixture
- Add milk to the concoction
- Decide on your preferred form: You can go big with one baked pudding, or opt for mini-muffins (perfect for those with a smaller sweet tooth). Bake in a preheated oven at 180 degrees centigrade until it's a deep golden-brown hue, approximately 40 minutes for muffins and longer for the big dish
- In a saucepan, over medium heat, melt the sugar and butter. Add vanilla extract if you fancy (feel free to do so!)
- Once butter is melted, mix it up but leave it alone until the sugar has completely dissolved and the mixture is boiling away wildly
- Add cream, milk, or water to thin it down, just as you please! Pour this warm sauce over the cooked pudding, allowing time for the sauce to seep in
