Ingredients:

  • 1 stick (1/2 cup) butter, softened
  • 6 Tbsp brown sugar
  • 6 Tbsp white sugar

  • A pinch of baking soda
  • A pinch of salt
  • 1 cup semi-sweet chocolate chips, divided use
  • 1/2 cup coarsely chopped pecans
  • 24 caramels (e.g., Kraft), unwrapped
  • 1 Tbsp milk
  • 3/4 cup whole pecan halves
  • 1 tsp shortening

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Using an electric mixer, cream butter, brown sugar, and white sugar in a medium bowl.
  3. Add egg and vanilla extract, and mix again.
  4. In a separate bowl, stir together flour, baking soda, and salt.
  5. Gradually add the dry mix to the wet mix, stirring until a soft dough forms.
  6. Fold in 3/4 cup of chocolate chips and 1/2 cup of chopped pecans.
  7. Press the cookie dough evenly into the bottom of an ungreased 8-inch square baking pan.
  8. Bake for 28 to 33 minutes, or until golden brown. Remove from the oven.
  9. While the cookie base cools slightly, prepare the caramel layer. In a saucepan over low heat, melt the caramels together with the milk, stirring frequently. Once melted and smooth, remove from heat.
  10. Spread the caramel evenly over the warm cookie base, and sprinkle pecan halves on top.
  11. Let the bars cool completely before proceeding.
  12. Melt the remaining chocolate chips and shortening in a microwave-safe bowl, stirring every 15 seconds.
  13. Carefully drizzle this chocolate over the caramel layer.
  14. Let the chocolate set before cutting the bars into squares.
