Ingredients

  • 2 sticks unsalted butter
  • 10 ounces finely chopped bittersweet chocolate
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar
  • 4 large eggs, beaten
  • 2 teaspoons vanilla extract
  • 1 teaspoon kosher salt
  • 1 1/3 cups cake flour
  • 1/4 cup cocoa powder
  • 3 pints fresh raspberries
  • 1 quart softened ice cream (vanilla, chocolate, caramel)
  • Whipped Cream (Note below)

Mix it Up!

  1. Set the oven at 350°F and arrange a rack in the middle. Prep the baking dish by greasing it and lining it with foil, then greasing the foil.

Whipped Cream- 1 cup heavy cream- 2 tablespoons sugar- 1 teaspoon vanilla extract

Note: Make the whipped cream just before assembling the parfaits. Chill your mixing bowl and whisk for 15 minutes before beating the cream, sugar, and vanilla. Beat on low speed until combined, then increase speed to high until stiff peaks form. Avoid over-beating.
