Recipe

Ingredients (12)

  • 2 slices thick-cut bacon, diced
  • 2 tablespoons unsalted butter
  • 1/2 cup diced russet potatoes
  • 1/2 shallot, minced
  • 1 garlic clove, minced
  • 4 ounces room temperature cream cheese
  • 1 (6.5-ounce) can chopped and drained clams
  • 2 tablespoons coarsely chopped fresh parsley leaves
  • Salt and pepper, to taste (1/4 teaspoon each)
  • 16 wonton wrappers
  • 1 large egg, beaten
  • 2 tablespoons vegetable oil

Instructions

  1. Start by cooking the bacon until it's crispy, around 6-8 minutes. Drain and reserve bacon fat from cooking.
  2. In a skillet heated over medium-high heat, add the reserved bacon fat, potatoes, shallot, and garlic. Cook the potatoes until they soften and turn golden brown, approximately 4-5 minutes. Stir frequently to cook the shallot and garlic until they're translucent, about 2-3 minutes, then remove from heat to cool for 10 minutes.
  3. Next, mix together the cooked bacon, potato mixture, cream cheese, clams, and parsley in a large bowl. Salt and pepper to taste.
  4. Preheat your oven to 400°F (200°C).
  5. Brush the edges of the wonton wrappers with beaten egg. Spoon about 1 tablespoon of the filling into the center of each wrapper. Seal by bringing up the sides to create an "X" or diamond shape, pinching the edges together.
  6. Oil a rimmed baking sheet or coat with nonstick spray. Place the sealed wontons in a single layer onto the baking sheet. Brush with vegetable oil or spray with nonstick spray.
  7. Bake until golden brown and crisp, rotating halfway through, for 10-12 minutes. Serve immediately.
