  2. In a bowl, beat together the softened butter, sugar, and egg yolk until smooth.
  3. Stir in the chopped pistachios, ginger, lemon zest, and salt.
  4. Cut each nectarine in half lengthwise and remove the stones. Carefully scoop out some of the fruit to form a cavity for the filling.
  5. Fill each nectarine with about 2 tsp of the pistachio mixture. Arrange them in a shallow baking dish and pour in about 1/2 inch of the white wine. Sprinkle the nectarines with sugar.
