Humm emphasized that his return to animal products does not mean a departure from the plant-based approach at Eleven Madison Park. He cited the desire not to exclude guests as a reason for the change in direction. Those who wish to maintain a fully vegan dining experience can still request it at Eleven Madison Park.

The price for the new menu will be $365 and it will feature seven to nine courses. This revised menu aims to maintain creativity, attract a broader audience, and provide a shared dining experience, while continuing to promote plant-based cuisine as the foundation of the restaurant.
