The menu, consisting of four dishes, features an unusual prevalence of Parmesan, a cheese notorious for its non-vegan status due to the use of animal rennet in its production. This has caused confusion and displeasure among some guests, with users on Reddit questioning why Parmesan is so prevalent on the menu.

The Alpine cuisine in South Tyrol (Südtirol) is known for its extensive use of Parmesan, and it seems this tradition has not been overlooked by the restaurant in question. However, the use of Parmesan in dishes like the vegetable curry, a staple on the menu, has been met with criticism, with some finding the repetition of this option unappealing.

The vegan option in Germany is a rarity, with only about 390 out of 117,000 restaurants being purely vegan. From an economic perspective, it would make sense for most restaurants to cater to the majority of guests, including non-vegetarian and non-vegan diners. This is a view shared by hotel and service specialist Michael Bauer, who stated that a catering establishment is a profit-oriented business, and the goal is to reach as many people as possible with the menu.
