Ingredients
- 2 tablespoons fresh chevre (goat cheese)
- 2 teaspoons finely chopped fresh herbs (like parsley, chervil, chives) + more for garnish
- 3 large eggs
- 2 teaspoons whole milk
- 1/4 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper
- 1 tablespoon unsalted butter
Instructions
- Mash goat cheese with the chopped herbs in a small bowl until combined. Set it aside.
- In a medium-sized bowl, whisk eggs, milk, salt, and pepper until they're a pale yellow hue and the egg yolks and whites are seamlessly combined. Place a serving plate nearby.
- Melt butter in a non-stick skillet over medium heat until it starts to foam. Add the egg mixture and, using a rubber spatula, stir continuously, making the eggs form small curds (around 2 to 3 minutes).
