Ingredients:- 2.2-2.7kg (5-6lb) cabbage (Korean or Chinese)- 200g sweet rice flour- 1 Asian Pear- 1 Small Onion- 4 Garlic Cloves- 2 tsp Ginger- 6 tbsp Salt- Leek (1/2)- 450g (1lb) Korean white radish (mu or mooli)- 1 Carrot- 1 Red Chili- 1 Green Chili- 30g Dried Jujube Dates- 20g Pine nuts

Instructions:1. Mix together 2 liters (3½ pints) warm water and 115g (4oz) salt in a large bowl until dissolved. Let it cool.2. Salt each cabbage wedge and leave to wilt for 6-8 hours.3. Mix the cabbage paste, starch, and kimchi paste, then rub it over the cabbage leaves and form a parcel.4. Pack and press the kimchi, leave to ferment, and enjoy!
