Raspberry-Infused Layered Dessert Slices

For the Raspberry Jam:
- 10.5 oz frozen raspberries
- 1/2 cup caster or granulated sugar
Instructions
Let's bake the base.
- Sift flour and powdered sugar into a bowl. Rub in cold butter with your fingers until the mixture resembles crumbs.
- Stir in the beaten egg and bring the dough together into a ball. Wrap and refrigerate for 30 minutes.
- Preheat your oven to 180°C/350°F/gas mark 4. Roll out the dough on a floured surface to a rectangle shape of 40 x 22 cm / 16 x 9 inches, and cut in half. Prick each piece all over with a skewer and bake for 20 minutes. Leave to cool on a wire rack.
Now let's assemble the raspberry slices.
- Place one cooled base on a sheet of baking parchment.
- Mix icing sugar with 2 tablespoons of water and whisk until smooth. Spread evenly on the base and let it set for 30 minutes. Place the other base on a wooden chopping board and spread with raspberry jam. Top with the iced base, sprinkle with pink sprinkles, and cut into small triangular pieces.
Raspberry Jam
- Place frozen raspberries in a small heavy-based saucepan and bring to a boil, stirring continuously. Add sugar and simmer for 20 minutes.
- Let the jam cool. It should be very thick.
