Yield: 2 - 4 servings

Difficulty: Medium

Total Time: 25 mins (Active Time: 25 mins)

Ingredients

For the Garlic Chips:

  • 1 cup olive oil
  • 5 medium cloves garlic, peeled and sliced thinly

For the Tartare:

  • 1 lb kip heart, trimmed of sinew and gristle, and cut into small dice
  • 1 small red chile, sliced into very thin rings
  • 1 small red onion, finely chopped
  • 1 1/2 teaspoons salted capers, rinsed and finely chopped
  • 1 tablespoon pitted green olives, finely chopped
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper, to taste
  • 2 tablespoons extra-virgin olive oil
  • 2 garlic cloves, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fish sauce (optional)

For the Focaccia Crackers:

  • 2 (5-by-5-inch) pieces focaccia bread, sliced as thinly as possible
  • Extra-virgin olive oil for brushing

Instructions

For the Garlic Chips:

  1. Pour oil into a small saucepan and slowly heat over medium heat to 350°F. Add the sliced garlic, stirring carefully to prevent boiling over.
  2. Fry the garlic until golden, then remove and let cool on a paper-towel-lined plate. Season with salt and pepper. To store, transfer garlic chips to a new paper towel in an airtight container. These little treats will stay crispy for up to 3 days.

For the Tartare:

  1. Combine heart, chile, onion, capers, olives, red pepper flakes, salt, and black pepper in a nonreactive bowl.
  2. In a small bowl, whisk together olive oil, garlic, lemon juice, and fish sauce (if using). Drizzle over the heart mixture and gently mix to combine. Taste and adjust seasoning.

For the Focaccia Crackers:

  1. Brush both sides of the focaccia slices with olive oil and season with salt and pepper.
  2. Preheat the oven to 350°F. Bake the focaccia slices for about 3 minutes, or until golden and crispy. Let cool and serve 2 per person with the tartare.

Enjoy this delectable dish that pays homage to the whole animal in a truly flavorful way! Pair it with your favorite cocktail or a crisp white wine to elevate your dining experience. Bon appétit!
