Ingredients You'll Need:
For the cucumber juice:- 1 pound of peeled English cucumber, chopped coarsely
For the margaritas:- 100% agave tequila: 8 oz- Agave nectar: 4 oz- Freshly squeezed lime juice (8 medium limes): 4 oz- Yellow Chartreuse: 4 oz- Ice cubes- Lime wedges: 4, for garnish
Instructions for Success:
For the cucumber juice:1. Drop the chopped cucumber into a blender and smash it down into the pitcher. Blend until liquefied (approximately 30 seconds). You may need to stop the blender and mash the cucumber pieces again to enable the blade to spin correctly.2. Set a fine-mesh strainer over a 2-cup measuring cup and pour the liquefied cucumber through the strainer. Press on the cucumber solids with a rubber spatula to extract as much juice as possible. Reserve any extra juice for later use. Discard the solids.
For the margaritas:1. Freeze 4 cocktail glasses.2. In a 1-quart container, combine the cucumber juice, tequila, agave nectar, lime juice, and Chartreuse. Stir until well combined.3. Fill a cocktail shaker halfway with ice, pour 7 oz of the margarita mixture into the shaker, and shake vigorously until the outside of the shaker is frosty (approximately 30 seconds).
