  • 1 3/4 pounds ripe peaches
  • 2 medium cucumbers (about 1 pound), peeled, seeded, and chopped
  • 1 medium red bell pepper (about 6 ounces), chopped
  • 3/4 cup tomato juice
  • 3 tablespoons red wine vinegar, plus more as needed
  • Kosher salt
  • Freshly ground black pepper
  • Tabasco or other hot sauce
  • 30-40 small mint leaves
  • 18-24 small basil leaves
