Ingredients (7)

  • 3 lbs seedless watermelon, rind removed and cut into 1-inch cubes (around 6 cups)
  • 1 cup light rum
  • 1 cup freshly squeezed lemon juice (approximately 7 medium lemons)
  • ½ cup blackberry or raspberry liqueur
  • 2 tablespoons granulated sugar
  • Ice
  • Blackberries, for garnish

Instructions

  1. Line a large bowl with a fine-mesh strainer and keep it ready.
  2. Blend the watermelon in a blender until smooth, about a minute. Pour the Juice through the strainer as it collects in the bowl and use a spatula to scrape the inside and push the liquid through, leaving the pulp behind. Discard the pulp. You should capture around 3 cups of juice.
  3. Transfer the watermelon juice to a nonreactive 2-quart container. Add the rum, lemon juice, liqueur, and sugar, stirring until the sugar dissolves. Cover and chill for approximately 2 hours. Prior to serving, stir to recombine. Pour over ice and garnish with a few blackberries.
