  • 1/4 cup vegetable oil
  • 1 1/2 cups onions, diced
  • 3/4 cup carrots, peeled and diced
  • 1/4 cup celery, diced
  • 1 teaspoon minced garlic
  • 1/2 cup peeled, seeded, and diced tomatoes
  • 1 1/2 cups dry red wine
  • 2 cups beef stock
  • 1 tablespoon thyme
  • 1 teaspoon rosemary leaves, chopped
  • 2 bay leaves and 1 teaspoon tomato paste
  • 1/2 cup strong Espresso
  • 1/2 cup dark chocolate, chopped or shaved
