Here's a tasty twist on a summer staple recipe I whipped up for a breezy graduation fiesta! This delectable Grilled Salmon with Spicy Orange Banana Glaze goes splendidly with a chilled Pinot Grigio.

Ingredients (10)

  • Four 6 oz. Wild Salmon Steaks, with skin on
  • Four ripe Baby Bananas, peeled and cut lengthwise
  • Three-quarters of a cup Orange Marmalade
  • Three-quarters of a Chipotle Pepper in Adobo, seeds removed and chopped fine
  • One teaspoon Chipotle Pepper Adobo Sauce
  • Juice of one-quarter fresh lime
  • Canola Cooking Spray
  • Dry Mojo Seasoning
  • Five Spice Powder
  • Fresh Lime Wedges

Let's Get Started!

  1. Give your salmon fillets a thorough check for removing pin bones. Coat the flesh in canola spray and dust generously with dry mojo. Sprinkle five spice powder over the peeled bananas. In a bowl, mix the marmalade, chipotle pepper, adobo sauce, and lime juice until uniform.
  2. Fire up the grill! Prepare the grill for medium-high heat on gas grills, or direct heat on charcoal grills. Don't forget to clean and oil the grates beforehand. If using charcoal, soak a cup of your preferred wood chips and scatter them on the coals prior to grilling the salmon.
  3. Grill the banana slices on both sides for 2-3 minutes each side and set them aside on a warm plate. Grill the salmon, flesh side down, with the lid covered for 4-5 minutes to create nice grill marks. Flip the salmon skin-side down. Carry on cooking until the internal temp reaches 120°F. Interlock the banana curves along the salmon steaks and glaze them with the mixture while it's still on the grill; the glaze should just start to drip from the salmon. Let the salmon continue cooking under the lid until it's firm and the internal temp reaches 145°F.
  4. Presentation Time! Scatter glaze around the serving plate, place the steaks in a spoke-like fashion, and squeeze lime wedges between the steaks. Dive in and enjoy!
