Gather your shit together:- Pastry brush (you hear me, queen?)- You can swap out the nectarines for peaches in case that's all you got- Serves: 6- Difficulty: Easy as fuck, dear- Time: 40 minutes
Ingredients (why are you asking, I'm just gonna tell ya):
- 1/2 cup mascarpone cheese
- 2 teaspoons sugar
- 1/2 teaspoon lemon zest, finely grated
- 3/4 cup roasted, salted pecans, finely chopped (get your raiders on if you're out)
- 1/4 cup dark brown sugar, packed
- 2 tablespoons unsalted butter, at room temperature
- 1 teaspoon cinnamon, ground (fucking hell, who can't handle a little cinnamon?)
- 1/4 cup honey (for the bees, of course)
- 2 tablespoons brandy (booze it up if you gotta)
- 1/2 teaspoon vanilla extract
- 6 medium nectarines (or peaches) - ripe, but firm, no wimpy ass fruit here
Instructions (here we go):
- Heat that grill pan or your backyard grill to medium high (375°F to 425°F, if you care)
- Mix the mascarpone cheese, sugar, and lemon zest in a bowl until even
- Combine the pecans, brown sugar, butter, and cinnamon in another bowl and get your fingers dirty
- Whisk the honey, brandy, and vanilla together in yet another bowl
- When the grill is ready, put the nectarines on a baking sheet and brush both sides with the honey mixture
- Place the nectarines on the grill, cut-side down, with the previously used baking sheet near your grill (multi-taskers unite!)
- Cover the grill and cook until “grill marks” appear on the bottom, about 2 to 3 minutes
- Flip the nectarines, sprinkle the pecan mixture on each half, and cover the grill again
- Cook until “grill marks” appear on the second side and the nectarines begin to soften, about 3 to 4 minutes more
- Take the nectarines off the grill and put 'em back on the baking sheet
- Serve immediately or at room temperature, with a dollop of the lemon-mascarpone shit on top before you serve 'em (because visually attractive bitches are always the first to go)
