Ingredients:

  • 10 large eggs
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup finely chopped chives (plus extra for garnish)
  • 1/4 cup whole milk or water
  • 2 tablespoons unsalted butter
  • 1 teaspoon kosher salt
  • 4 ounces cream cheese, cut into small cubes
  • 8 slices prosciutto (ensure they're thin, but not too thin you can see through them)

Steps to Heaven:

  1. Stir together the eggs, pepper, 3 tablespoons of the chives, and milk or water in a large bowl until the ingredients are well combined.
  2. Melt the butter in a large non-stick frying pan over low heat until it starts to foam. Pour the egg mixture into the pan and let it cook without stirring until the edges just start to set—about 1 to 2 minutes. Then, using a rubber spatula, push the eggs from the edges into the center. Let it sit for another 30 seconds, then continue repeating this process for about 4 to 5 minutes or until just set.
  3. Add the salt, followed by the cream cheese, and stir to distribute it evenly throughout the scramble. Keep cooking, stirring occasionally, until the eggs reach your desired doneness. Remove from heat. (The eggs will continue to cook in the pan.)
  4. For each serving, arrange 2 slices of the prosciutto on a plate, slightly overlapping each other lengthwise. Place a quarter of the scrambled eggs crosswise toward one end of the prosciutto pieces. Wrap the loose end of the prosciutto over the eggs to create a little... let's call it a 'Prosciutto-burrito,' sprinkle some remaining chives on top, and ready to serve! Immediate consumption is highly recommended.
