  • 1 pound dried Navy or Pea beans (roughly 2 1/2 cups)
  • 8 ounces thick-cut bacon slices (about 6 slabs), chopped to bits

  • 1/2 cup ketchup
  • 1/4 cup dark molasses (not light or blackstrap)
  • 1/4 cup packed dark brown sugar
  • 1 tablespoon cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon kosher salt, with more if needed
  • 1/2 teaspoon freshly ground black pepper, plus extra pepper if you want (Go wild!)
  • 1/8 teaspoon ground cloves

Directions

  1. Drop the bloody beans into a big-ass bowl, scan through for any broken beans or stones, and discard any cast-offs. Cover the beans with at least 3 inches of cold water and let them soak UNCOVERED at room temperature for at least 8 hours or friggin' overnight. Drain those beauties in a colander and store the bowl aside (no washing needed). Cram the beans, bacon, and onion into the slow cooker.
  2. In the bloody reserved bowl, mix the remaining ingredients like a mad scientist and pour that concoction into the slow cooker. Don't forget to stir and combine the contents. Cover the damn thing and cook on either high or low heat until the beans are softened, and the sauce thickens slightly (should thicken more as it cools). Put a taste test in your mouth, add salt and pepper if required.

Step 5: Combine Ingredients in Slow Cooker

Blend the cooked onion and garlic medley, diced bacon, ketchup, barbecue sauce (if you want), molasses, brown sugar, Dijon mustard (if using), smoked paprika, salt, pepper, and chicken or veggie broth into the slow cooker with the beans.
