  • Total: 1 1/2 hours
  • Active: 20 minutes

Ingredients (18)

  • 1 pound chicken wings, separated
  • Salt and pepper to taste
  • 1/3 cup starch (potato or corn)
  • 1/2 cup milk
  • Vegetable oil for deep frying

Spicy Sauce (per pound of chicken)

  • 2 tablespoons red chili powder
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar (or honey, or corn syrup)
  • 1 tablespoon rice or cooking wine
  • 4 cloves garlic, peeled
  • 1-inch piece fresh ginger, peeled
  • 2 heaping tablespoons gochujang
  • Water as needed to make a thin paste

Garnish

  • 1 green onion, sliced
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Get your wings ready! Rinse and dry the wing pieces, then lightly salt and pepper them. Give them a rest for 10 to 15 minutes before dipping in milk and refrigerating for about one hour, turning them several times.
  2. Blend garlic and ginger with some water in a blender until liquefied. In a small bowl, combine this mixture with all other sauce ingredients and stir well.
  3. Finely chop the green onion and set it aside.
  4. Heat the oil in a large pot (350°F or use the bread test). Remove the wings from the fridge, discard the milk, and let them drain until just damp. Roll the wings in starch and deep-fry until golden brown, then drain them. Transfer the cooked chicken to a large pan or wok over medium to medium-high heat, add the sauce, and stir-fry until all liquid is gone.
  5. Arrange the wings on a serving tray and garnish with the sliced green onion and sesame seeds. Serve these spicy, mouthwatering wings as a delicious appetizer or pair them with steamed rice and pickled side dishes for a filling meal.
