Ingredients:- 2 pounds of green beans, trimmed of their stems- 0.5 pound of delectable, sliced smoked bacon, chopped into ½-inch pieces- 1 medium yellow onion, peeled and finely sliced- 1/3 cup of sharp red wine vinegar- 1 tablespoon of granulated sugar- Fresh, coarsely chopped Italian parsley, about ¼ cup- A generous pinch of salt- Generously grind some black pepper

Instructions:

  1. Drown a big pot in salt, then bring that bad boy to a roaring boil. Prepare your ice bath—just a bunch of ice in a bowl, ya know?
  2. Chuck those green beans into the boiling pot and cook until they're tender but still crisp. About 3 minutes should do the trick. Once they've had their bath, drain 'em and plunge them into the ice bath to chill. When they're done, drain them yet again and set them aside.
  3. In a big ol' pan—set it to medium heat—cook the bacon until it starts to bind with the pan, making a tasty, bacon paste of sorts. Add the finely sliced onion and let it caramelize till it turns a lovely golden hue.
  4. Now, invite the green beans back into the pan, along with the vibrant red wine vinegar and sweet granulated sugar. Stir it all around till the sugar has melted away. Mix in the parsley, generously season with salt and pepper, and voila! A smoky, slightly sweet vinaigrette-covered, crowd-pleasing dish that'll leave everyone asking for seconds!
