- Kale & Quinoa Salad: 4 cups fresh baby kale, 1 cup cherry tomatoes (halved), 1/4 cup crumbled feta cheese (optional), 1/2 cup red onion (thinly sliced), 2 tbsp olive oil, 1 tbsp balsamic vinegar, salt, and pepper.
Instructions
- Warm up the oven or toaster oven to 400°F. Housethe pork tenderloin in a shallow oven-safe dish. Cut 6 slits, evenly spaced, and insert the garlic pieces. Season it generously with salt and pepper. Let it chill at room temperature for 20 minutes as your oven gets cozy.
- In a small bowl, meld the apricot preserves, lemon juice, red pepper flakes, and cumin. Season with salt and pepper. If the preserves are still chunky, add more lemon juice (but not too much).
- Brush the pork tenderloin with olive oil and roast for 20 minutes. Take it out of the oven and spread the apricot mixture over it evenly. Return it to the oven and roast for another 10 minutes, or until the interior temp reaches 160°F.
