Spicy Goat Cooked in Jamaican-style Curry Sauce

Ingredients (12)
- 3 lbs goat meat with bone, cut into large cubes
- 1 large onion, diced medium
- 3 cloves garlic, minced
- 4 fresh thyme sprigs
- 1 bunch scallions, chopped medium-coarse
- 2 Scotch Bonnet peppers, leave whole and make a small "X" in the bottom of each one
- 2 Tbsp Jamaican curry powder
- 2 Tbsp Goya Adobo Seasoning without cumin (look for a blue bottle cap)
- Black pepper to taste
- 2 Tbsp vegetable or corn oil
- 5 allspice corns (whole)
- Optional: 5 large potatoes, peeled & cut into 2-inch cubes
Let's Get Cooking!
- Trim any excess fat from the goat meat cubes, season with the 2 Tbsp Adobo seasoning, and let it sit for 30 minutes.
- Chop the onions, garlic, and scallions while the goat meat marinates.
- Heat oil in a large, heavy-bottomed pot and fry 1 Tbsp of the curry powder until it darkens. Immediately add the goat meat cubes along with the chopped onions, garlic, scallions, thyme, whole allspice, and black pepper. Stir and fry for about 5 minutes over medium heat, making sure to stir constantly.
- Add the remaining curry powder, the Scotch Bonnet peppers, and about 1 Tbsp more of the Adobo seasoning. Pour in enough hot water to cover the meat, stir well, and bring to a boil. Lower the heat to a simmer, and after 40 minutes, remove the whole Scotch Bonnet peppers (if you enjoy an extremely hot dish, feel free to leave them in). Continue cooking, uncovered, until the meat is very tender (almost falling off the bone). You may need to replenish hot water several times during cooking as needed.
- When the meat is tender, add the optional potato cubes, and cover the pot, simmering on low heat until the potatoes are just tender. You want a somewhat thick sauce on the meat, so if the sauce is too watery when the potatoes are tender, remove the potatoes, turn up the heat to medium, and cook off excess liquid until a somewhat thick sauce forms.
- Return the potatoes to the pot, stir, and turn off the heat.
Tip: For an authentic Jamaican meal, serve this dish with Indian-style roti or pita bread. Warm the bread by placing it on a plate, covering it with plastic wrap, and heating it in the microwave for about a minute, or by wrapping it in foil and warming it in a low oven for a few minutes. Alternatively, heat and very lightly toast each piece over the direct flame on the stove.
