Ingredients (10)
- 1 can (10.5 ounces) cream of mushroom soup
- 3/4 cup coconut milk
- 16-20 oz thawed and sliced green beans (1-inch pieces)
- 1 1/3 cups fried onions
- 2 cloves garlic, peeled and thinly sliced
- 2 teaspoons fresh ginger, peeled and minced
- 1 green chili (seeded and minced, serrano or jalapeño)
- 1 1/4 teaspoon ground cumin
- 1/2 teaspoon kosher salt
- 1 teaspoon vegetable oil
Directions
- Warm up the oven to 350°F. Blend the cream of mushroom soup, coconut milk, black pepper, green beans, 2/3 cup fried onions, garlic, ginger, green chili, 1 teaspoon of cumin, and salt in a large bowl until combined. Spoon into a 9- x 9-inch casserole dish. Let it bake for 25 minutes, or until bubbling and hot.
- Combine the remaining fried onions, vegetable oil, and the rest of the cumin in a small bowl, then sprinkle on top of the casserole just 2 minutes before it's done. Ready to serve!
