Ingredients

  • 1 1/3 pounds ground dark-meat turkey
  • 3 tablespoons finely chopped yellow onion
  • 1 teaspoon chili powder
  • Finely grated zest of 1 lime
  • 1/3 cup finely chopped cilantro
  • 1 teaspoon kosher salt, plus more as needed
  • Freshly ground black pepper
  • 1 large ripe avocado, halved, pitted, and peeled
  • 1 small ripe tomato, seeded and finely chopped
  • Juice of 1/2 lime
  • Vegetable oil, for the grill
  • 4 slices Monterey or pepper Jack cheese
  • 4 hamburger buns (see optional tip)

Materials (optional)

  • Grill pan or outdoor grill
  • Wadded paper towels
  • Tongs or spatula
  • Instant-read thermometer

Instructions

  1. Prepare the turkey mixture: Combine the ground turkey, onion, chili powder, lime zest, half the cilantro, measured salt, and some pepper in a medium bowl. Use your hands to gently combine, forming 4 even 1/2-inch-thick patties with shallow indentations. Set aside.
  2. Prepare the guacamole: In a small bowl, mash the avocado. Add the tomato, remaining cilantro, and lime juice; season with salt.
  3. Fire up the grill: Heat your grill pan or outdoor grill to medium-high heat (around 375°F to 425°F). Brush the grill with oil or use cooking spray.
  4. Grill those patties!: Cook the burgers, undisturbed, for about 5 minutes until grill marks appear. Flip, add the cheese, and cook until the internal temperature reaches 165°F (about 6 minutes more). Don't forget to tent the burgers with foil for 5 minutes before serving.
  5. Toast the buns, if using, on the grill for extra crunch.
  6. Assemble the masterpiece: Slather guacamole on your bun bottoms, slide on those juicy, cheesy turkey burgers, and crown with bun tops. Time to feast like a boss!
