Optional:- Tomatoes (chopped or crushed in a blender) for added flavor- Chicken or Pork (chopped) if you prefer a protein-packed curry

Instructions:

  1. Heat the oil in a large pan over medium heat.
  2. Add the onion and cook until softened (about 5 minutes).
  3. Add garlic and ginger, cook for 1 minute, stirring constantly.
  4. Add the pumpkin and mix well.
  5. Add the curry powder, cumin, turmeric, paprika, salt, black pepper, and crushed red chilies. Mix everything well, ensuring the pumpkin is coated with spices.
