- 1/2 cup small-diced dried papaya, dried pineapple, or a combination

- Preheat the oven to 300°F with a rack neatly arranged in the middle.
- In a bowl, combine the spelt, coconut, and salt. Set aside.

- Spread the mixture across a rimmed baking sheet in a thin, even layer. Bake for approximately 20-25 minutes or until golden brown.

- Using your bare hands, gently break the granola into small clumps before setting it aside to cool completely, about 20 minutes more. Note that it will become crispier as it cools.
