Ingredients (7)

  • ground turkey
  • 1 onion, finely chopped
  • 1 bell pepper, diced
  • 2 eggs
  • day old bread or bread crumbs
  • your favorite barbecue sauce or Wishbone sauce
  • salt and pepper, to taste

For Brown Rice

  • 1 cup brown rice
  • water for boiling
  • 1 tablespoon oil

For Carrots

  • 4 large carrots, sliced on the bias
  • 2 tablespoons water
  • 1 teaspoon sugar

Instructions

Meatloaf

  1. Preheat your oven to 350°F (175°C).
  2. Combine the finely chopped onion, diced peppers, ground turkey, eggs, breadcrumbs, barbecue sauce, salt, and pepper in a large mixing bowl. Mix well with your hands until just combined.
  3. Shape the mixture into a loaf and place it on a baking sheet lined with parchment paper.
  4. Bake for 40 minutes or until golden brown.

Brown Rice

  1. Rinse the brown rice in a colander, then heat 1 tablespoon of oil in a heavy pot.
  2. Add the rinsed rice to the pot, fry until all grains are coated.
  3. Add enough boiling water to cover, put on a tight lid, and reduce the heat. Let the rice steam on the back burner.

Carrots

  1. Add 2 tablespoons of water and 1 teaspoon of sugar to a pot, then heat on low.
  2. Add the carrot slices and mix until all slices are coated.
  3. Cook for 8 minutes on low heat.

Cooking Tip

Adjust the sequence based on your available cooking appliances. For instance, if you have a multi-cooker, you can use it to prepare the carrots, meatloaf, and brown rice together. Or, if you prefer, start with the rice as it takes the longest to cook before starting the other dishes. Enjoy your meal!
