Instructions

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
  2. Roll out each puff pastry sheet into a 12-inch square. Trim the edges, then cut each sheet into 4 squares for a total of 8 squares. Arrange on the prepared baking sheet and refrigerate for 10 minutes.
  3. Combine pear chunks, lemon juice, brown sugar, flour, cinnamon, nutmeg, ginger, and salt in a large bowl. Stir until well combined.
  4. Remove pastry squares from the fridge, and brush the edges of each square with the egg wash. Divide the filling among the pastry squares, placing it in the middle of the square.
