Recipe for That Crave-Worthy Chinese Spicy Noodle Dish

Ready to whip up something quick and scrumptious for dinner? This Spicy Asian-inspired Chicken Noodle dish is just what you need. Use leftover roasted chicken or grab a rotisserie chicken on your way home to save time. Don't worry, stir-frying the noodles isn't hard; it's all about melding flavors in the pan.

Ingredients (15 items)

For the Sauce:

  • 1.5 tbsp light brown sugar
  • 1 large clove of garlic, minced
  • 1.5 tsp freshly grated ginger
  • 3 thinly sliced green onions
  • 3 tbsp reduced-sodium tamari or soy sauce
  • 2 tbsp unseasoned rice vinegar
  • 1 tbsp canola oil
  • 1.5 tsp toasted sesame oil

For the Stir-Fry:

  • 9 oz fresh Chinese egg noodles, or 8 oz spaghetti or linguine
  • Canola oil
  • 1 peeled and cut into matchsticks large carrot
  • 1 small red bell pepper, stemmed, seeded, and sliced
  • 1 cup cooked, shredded chicken
  • Sriracha to taste
  • 1/4 cup chopped toasted peanuts

Instructions

Sauce:

  1. Combine all the sauce ingredients in a bowl until the sugar dissolves. Set aside.

Stir-Fry:

  1. Boil a large pot of salted water and cook the noodles al dente, as per the package directions. Drain.
  2. In a wok or large frying pan, heat a glug of canola oil. Add the carrots and bell pepper and sauté until slightly tender. Add the drained pasta, reserved sauce, and shredded chicken to the pan. Add Sriracha as desired. Stir-fry until warmed through and mixed, about 2 minutes.
  3. Divide between bowls, sprinkle with peanuts, and serve.
